Mil Centro is the restaurant owned by award-winning chefs Virgilio Martínez and Pía León, along with doctor and researcher Malena Martínez, located in Peru, Cusco, in the small village of Maras, right next to the archaeological site of Moray, at 3,500 meters above sea level. Mil is also the headquarters and gastronomic face of Mater Iniciativa, the project that Virgilio and Malena lead alongside a group of scientists, researchers, chefs, designers, artists, and artisans from various disciplines, but especially in collaboration with members of the neighboring indigenous communities. These communities have been providing ingredients and concepts not only to Mil but also to the prestigious restaurants Central and Kjolle, and the Mayo bar in Lima, helping to highlight the deep connection between food, culture, producers, and nature.
This book is much more than a restaurant’s book. It is the book of a project—an interdisciplinary project that invites the reader on a culinary and cultural journey with the hope that this experience will forever and profoundly deepen their relationship with food and help them understand that there is more out there, and that a dish, beyond being a product and a recipe, is a profound and intricate relationship with the environment.
