Book - Las empanadas de la Chacha
Book - Las empanadas de la Chacha
"María del Carmen Vicario is known to everyone as 'La Chacha,' and for more than fifteen years, she has been part of the family and has worked with us at the Casa del Visitante restaurant. She is in charge of the restaurant’s empanadas. There, by the clay ovens, tending the fire, filling the discs of homemade dough, shaping the edges, and among trays filled with empanadas, she found her place. La Chacha learned to make empanadas when she was seven years old, when her mother would fall ill and she had to shoulder the household responsibilities. Her brothers would heat the oven, and she would prepare the puff pastry dough. The memory of her hands holds the shape of every fold in the dough, and that is why she has made the empanadas of Casa del Visitante a hallmark of Mendoza." — Julia Zuccardi
